Lumberjack Breakfast Cake






I have been under the weather this week and haven't finished organizing my craft room like I had mentioned last week. I have been wanting to share this amazing recipe for awhile now so I thought today was perfect for it.

A friend made this at a breakfast party and I fell in love. I am not a cake person, quite the opposite but this definitely is an exception. I love that who ever came up with this recipe named it so you can eat cake for breakfast, genius. This is now become my favorite breakfast food, add a bowl of fruit and it is perfect. (Sis, you don't need to double the topping on this one, it is just perfect the way it is. Lots of topping and the cake is super moist.)



Lumberjack Breakfast Cake


Cake Ingredients:

1 1/3 cups flour
1 tsp. cinnamon
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
2 egg whites
1 cup quick oats
1 1/2 hot water
2 egg yolks
1 c sugar
1 cup brown sugar
1/2 cup vegetable oil
1 1/2 tsp. vanilla

Icing Ingredients:

1 cup brown sugar
1/3 cup butter
2 tbsps. milk
1 1/2 cup oats

Mix flour, cinnamon, salt, baking powder and baking soda. Sift and set aside. Beat egg whites until soft peaks form and set aside. Stir oats into hot water. Let stand a few minutes. Stir in egg yolks, sugar, brown sugar, vegetable oil and vanilla. Mix in sifted ingredients. Fold in beaten egg whites. Bake at 350 degrees for 30 minutes. While cake is baking make the icing. Bring brown sugar, butter to boil. Stir in oats. Put topping on top of the hot cake right out of the oven. Yield one 9"X13" cake.
